Milk is key to building bigger baskets
Despite more beverage options on the shelf than ever, dairy milk retail sales are projected to grow to $21 billion by 2030.2
Part of milk's strength is its versatility. White milk is nearly three times more likely to appear in baskets containing top breakfast items like cold cereal, eggs and waffles.3 It also adds an all-natural, high-quality protein boost to beverages like coffee, tea, smoothies and protein shakes.
The bigger story is what milk does to the whole basket. Trips that include milk average nearly twice the spend of trips that don't: $88.79 versus $46.23.4
Seasonality adds another layer. Milk shines during the fall and winter holidays, with whole milk, buttermilk and eggnog each playing a role. After the new year, lower-fat milks spike to align with wellness goals. In summer, milk offers another reason to reach for the dairy case: it hydrates better than water.
The combination of broad reach and seasonal relevance gives retailers a reason to keep milk visible and top of mind year-round, not just when demand is highest.

There is a milk for everyone
Consumers choose milk for different reasons, from taste and nutrition to digestibility and health benefits. Most households don't pick just one. Sixty percent of buyers purchase two or more types of milk, which gives retailers real room to build assortments around different needs rather than one default choice.5
FMI's Power of Beverage 2026 research shows that occasion and personal need increasingly shape beverage choices, and dairy milk's fastest-growing segments prove this point:
- Whole milk continues to climb, accounting for 50% of total gallon sales, with 60% of milk buyers having it in their basket.6,7
- Lactose-Free milk has grown into a $3.3 billion segment, with one in four households now purchasing it.7
- Ultra-Filtered Lactose-Free milk has higher protein and lower sugar, and shoppers seeking protein are taking notice: dollar sales are up double digits, with a 12.5% spike compared to last year.8
- A2 milk is seeing 52% growth in dollar sales for shoppers who have trouble digesting A1 proteins, making it a smaller but fast-moving segment worth watching.9
The opportunity also extends beyond traditional dairy shoppers. Eighty-five percent of plant-based beverage households also purchase dairy milk, showing that dairy milk is popular even in the most unexpected places.10
Together, these indicators create an opportunity for retailers to make their assortment and merchandising more relevant. A sharp focus on shoppers' needs can help retailers offer the right choices, while clear signage can help shoppers find the right milk in store or online.
A broad range of need states is exactly why milk's role in the basket keeps expanding. "Buying milk isn't a single decision. It's several decisions happening under one roof," said Kikke Riedel, senior vice president of strategy and insights at MilkPEP. "A parent buying whole milk for their children might also be picking up a lactose-free option for themselves or a protein-enhanced one for a workout. Retailers that stock for those needs can capture more of the basket."

Turn milk's reach into omnichannel growth
Dairy milk's strengths show up differently across channels. Grocery accounts for almost half of total milk volume sold at retail, while more than 25% of shoppers purchase milk Online.11,12
Retailers can build on milk's momentum by connecting it to complementary categories across aisles. In the digital space, search, recommendations and occasion-based collections can elevate the online shopping experience and help shoppers discover new uses and favorite pairings.
The ubiquity of milk is unmatched, whether across occasions, channels, day parts or seasons. The opportunity is to move beyond treating it only as a destination category and make it an intentional part of the broader basket. Retailers that achieve this can capture more trips and unlock incremental growth.
